- 1 cup white rice
- 2 cups coconut milk
- 1 cup whole milk
- 2 large eggs
- 1/4 cup sugar
- 1/2 cup diced mango
- 1/2 cup diced pineapple
- 1 tsp vanilla extract
Instructions
- In a saucepan, combine the white rice, coconut milk, and whole milk.
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce heat to low and simmer for 20 minutes, or until rice is soft and creamy.
- In a separate bowl, whisk together the eggs and sugar.
- Slowly add a few spoonfuls of the hot rice mixture into the egg mixture to temper.
- Stir the tempered eggs back into the saucepan and cook for an additional 5 minutes, stirring constantly.
- Add vanilla extract, diced mango, and pineapple.
- Stir to combine and cook for 1 more minute.
- Serve warm or chilled, garnished with extra fruit if desired.
Notes
Use fresh mango and pineapple for the best flavor. Adjust sweetness to taste. Can be served as a dessert or hearty breakfast.
