Ingredients

  • 1 cup white rice
  • 2 cups coconut milk
  • 1 cup whole milk
  • 2 large eggs
  • 1/4 cup sugar
  • 1/2 cup diced mango
  • 1/2 cup diced pineapple
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, combine the white rice, coconut milk, and whole milk.
  2. Bring to a gentle boil over medium heat, stirring frequently.
  3. Reduce heat to low and simmer for 20 minutes, or until rice is soft and creamy.
  4. In a separate bowl, whisk together the eggs and sugar.
  5. Slowly add a few spoonfuls of the hot rice mixture into the egg mixture to temper.
  6. Stir the tempered eggs back into the saucepan and cook for an additional 5 minutes, stirring constantly.
  7. Add vanilla extract, diced mango, and pineapple.
  8. Stir to combine and cook for 1 more minute.
  9. Serve warm or chilled, garnished with extra fruit if desired.
