A healthy and visually stunning breakfast made with gelled oats, fresh fruit, and creamy yogurt.
Ingredients
Scale
- 1 cup rolled oats
- 2 cups milk or plant-based milk
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 tbsp gelatin powder (or agar-agar for vegan)
- 1 cup mixed fresh fruit (berries, mango, kiwi, etc.)
- 1 cup yogurt (dairy or coconut)
Instructions
- In a saucepan, combine oats, milk, sweetener, and vanilla. Cook over medium heat for 5–7 minutes until oats are soft.
- Sprinkle gelatin over 1/4 cup warm water, let bloom for 5 minutes, then stir into the hot oat mixture until dissolved.
- Pour oat mixture into serving glasses or molds and chill for 3 hours or overnight until set.
- Top with fresh fruit and yogurt before serving.
Notes
Swap dairy yogurt for coconut yogurt to make it vegan. Add cocoa powder for a chocolate twist.
